60-year-old Grenache vines from the Wait vineyard, high in the Blewitt Springs subregion, were hand harvested early at 12 Baumé, specifically for Rosé production. The bunches were destemmed and allowed to rest in the press for 3 hours to extract just the right amount of colour, flavour and tannin. Fermentation was carried out at low temperature (12-13C) in order to retain aromatics.

Aromatic, dry and delicate as a pretty in pink ballerina springing across the palate.
